I stumbled across this amazing Apple Cake recipe on 17 and Baking and decided to make it for National Cake Day (which was on August 22nd). My best friend Krista was visiting from Boston and I figured it’d make the perfect breakfast with a side of freshly sliced mango.
Great-Aunt Ethel’s Fresh Apple Cake Makes a single-layer cake
4 cups raw chopped apples (large chunks) 2 cups flour 1 tsp baking soda 1/2 tsp salt 2 cups sugar 2 eggs, beaten 1/2 cup butter, melted 1 tsp vanilla
Mix dry ingredients. Add chopped apples and mix so that apples are  coated with dry ingredients. Add vanilla and eggs. Mix. Add melted  butter. Mix well by hand. Place in greased pan. Bake at 350 degrees for 1  hour.
(Note: I also tossed in a tablespoon of cinnamon just for a bit of a kick and because my oven is ancient, had to bake for a little over an hour so that the center was cooked through)
