Happy First Day of Summer!
What better way to kick off the summer fun than with a BBQ? Bust out the plastic utensils, iced-tea-lemonade, potato salad, burgers and cupcakes!
I absolutely love a good BBQ, but what normal American doesn’t? So in honor of spending the summer at the grill, let’s make some cheeseburger cupcakes.

I recently made these for a friend’s birthday and they were a huge hit:
Cheeseburger Cupcakes
What You’ll need:
- 1 Box of chocolate cake mix
- 1 Box of vanilla cake mix
- Whatever the box says you’ll need for those mixes, usually veggie oil and eggs
- Frosting (Red, Green and Yellow). You can either use store-bought or prepare a buttercream and use food coloring. I made sure I had at least 2 cups of each color
- A few tablespoons of orange juice
- Sesame seeds
Step 1: Prepare both the chocolate and vanilla cupcakes. Each box should yield 24 cupcakes. Let them cool.
Step 2: Using a very sharp knife, cut the tops off the vanilla cupcakes and put them aside. You’ll need these later!
Step 3: Cut the tops off the chocolate cupcakes. You can do what you please with the bottoms: decorate them later, make a leaning tower of cupcake bottoms etc. We won’t be using the bottoms, only the tops!
This is where things get tense.
Step 4: Using the yellow frosting (aka cheese), pipe onto the flat side of the chocolate cupcake top and place onto the bottom vanilla piece. Make sure to add a little in the middle so you know it’ll stick.

Step 5: Add the Red (ketchup) and Green (relish) frosting on top of the “burger” part.
Step 6: Place the vanilla top back in it’s rightful place and push down gently to it all sticks together nicely. Sort of looks like a cheeseburger, right?
Step 7: Brush a little OJ on top of each cupcake and sprinkle with sesame seeds. The OJ adheres the sesame seeds to the cupcake tops and gives them a nice burger-esque finish. No worries, you can’t even taste them!
EXTRA FUN:
Buy a package of pre-made sugar cookie dough and roll it thin. Cut 2-3” x 1” pieces, sprinkle with sugar and bake for required amount of time. Right when you take them out of the oven use a very sharp knife or pizza wheel to cut them into smaller strips. Lt cool. Serve your sugar cookie french fries with the cupcake cheeseburger and use whatever leftover red frosting you have as ketchup for dipping!
