Easy Spicy Chicken Soft-Shell Tacos

I decided to soak some black beans all day so I could come home and make one of my favorite foods, tacos! It’s amazing how quickly a taco/burrito can go from healthy to absolutely horrible for you. Places like Chipotle succeed greatly in that department and as much as I love super-burritos, I tend to keep things on the waistline-conscious side when it comes to actual mealtime.
Tonight was simple - foolproof, really. A quick solo meal or multiply it for the whole family. The trick to keeping it healthy? Cut out the cheese and only use a tablespoon or two of light sour cream. Cut out the salsa (even though it’s my favorite condiment it contains a copious amount of sodium) and stick to spices.
Grab your sombrero, we’re makin’ tacos!
Ingredients:
- Boneless, skinless chicken breast - about 1/2 breast per taco
- Fresh plum tomatoes, chopped
- Fresh avocado, sliced thin
- Romaine lettuce, chopped
- Black beans (you can use canned ones, but rinse them thoroughly first!)
- Onion (optional)
- Light sour cream
- Spices (I chose cayenne pepper and coarse black pepper)
- Tortilla (I went for the medium-sized)
Heavily apply your spices of choice to both sides of the chicken. Rub it in! Go ahead, give it a good massage… it’s had a rough life. Slice chicken the long way so you have long, thin strips.
Toss the strips in a hot pan that’s either been sprayed with Pam or had a little bit of olive oil in it. Cook thoroughly and remove.
Quickly wipe out the chicken residue in the pan with some paper towels (don’t burn yourself!) and warm the tortilla for 10-15 seconds on each side.
Toss your ingredients into that tasty toasted tortilla: lettuce, avocado, chicken, tomato, beans, onion… and add a dollop of the light sour cream. You’ll find out that the chicken is so spicy there’s no need for salsa… plus the salsa would kill all those wonderful flavors! No cheese needed since you have the sour cream. It was a very light, filling meal to enjoy during this hot and humid weather.

It’s easy. It’s delicious. It’s healthy. And it leaves me with leftovers for lunch tomorrow! Enjoy!
